Butternut Squash Casserole

This is one of my favorite vegetarian dish.

Ingredients:

1 butternut squash (around 4 pounds) peeled, seeded, and diced
1/4 cup extra-virgin olive oil
1/2 yellow onion minced
1/2 cup Italian bread crumbs
6 ounces crumbled blue cheese
1 tablespoon minced fresh thyme
1/4 cup Italian bread crumbs
Salt and pepper to taste

Preparation

Preheat your oven to 425 F.
In a mixing bowl, toss the olive oil, squash, onion, 1/2 cup Italian bread crumbs, blue cheese and thyme. Sprinkle with salt and pepper to taste.
Pour the mixture into a large baking dish and sprinkle with1/4 cup bread crumbs over the squash.
Place in the oven and bake for about 35 minutes until lightly browned.
Serve and enjoy.
